Amaranth is originally from Mexico. One of the few ancient species is Hypochondriacus, which is well known for its superior nutritional content and agricultural benefits. Most amaranth grains available online are not Hypochondriacus, but other species which are produced outside of Mexico.

Water ratio for amaranth grain when cooked stovetop:
For every cup of amaranth grain add 2 cups of water. Let the water boil and then add the amaranth; cover and let cook for about 25 minutes or until the water is absorbed; then turn off and cover again for a few minutes.
